Title: Pineapple Make Ahead Muffins **

2cFlour
1tsBaking soda
1/2tsCinnamon
1/4tsNutmeg
1/8tsGround cloves
1/4tsSalt
2/3cShortening
1/2cBrown sugar; packed
2 Eggs
1/2cSour cream
1/2cMilk
8 1/4ozCrushed pineapple; drained

Mix first 6 ingredients. In mixer bowl, beat shortening and brown sugar until fluffy. Beat in eggs, sour cream, and milk. Stir in flour mixture. Fold in pineapple. Store in airtight container in refrigerator, up to 2 days. Before baking, DO NOT STIR BATTER. Fill greased muffin cups 2/3 full. Bake in 350~ oven for 25-30 minutes.
